5 reasons to go pescetarian
It's been 10 days since I began my 30-day pesco-vegetarianism challenge (a diet abstaining from eating the flesh of land animals) and I'm feeling pretty good. Studies show it takes at least 21 days to form a habit...I can actually see myself prescribing to this for the rest of my life. Why?
Five reasons:
- Simplification...It's actually easier to make choices in what to eat.
- Health...There are findings that red meat is detrimental to health in many cases due to non-lean red meats containing high amounts of saturated fats, aka. I feel FREAKIN' good!
- Energy Efficient...Red meat as a food source is inefficient. The amount of calories in the grain needed to feed a cow, pig or chicken (to a lesser extent) greatly exceeds the nutritional value of the meat these animals provide. Were this grain to be used for human consumption instead, far more food could be provided.
- Ethics...I feel better about not eating mass market "meat" mammals (most of which are not free range).
- Bowel Movements...I actually heard my colon thank me the other day (and yes, I just went there).
Most importantly, I am feeling good, my body feels good and I am not experiencing a diet shock since I'd eaten pretty healthy up to this point (thank you Chipotle). FYI...drink more water. I cut out sodas from my diet 12 years ago and have basically stuck to water & juice since then. You'll be amazed how many pounds you drop by simply doing this ;-)

wedding vendors directory feature
Wedding Vendors Directory recently featured my photograph from Nneka & Imo's morning after shoot in Barbados last summer. They serve as a useful resource for brides-to-be. Swing by the site if you'd like to see some of the previous features (like my buddy Victor Sizemore) and what camera setttings/glass I used for this shot.

While taking holiday on the West coast, the Wrights wanted to take part of it back home to England with them. They embody a great sense of style, an open love for each other and carry a fun-loving aura about them. Beautiful people, beautiful locations...I had a great time doing my thing.

Hi. My name is Fred. Long time carnivore here. I've been on the brink of cutting meat out of my diet in the past but the perfect storm of genetically modified foods awareness, heightened sensitivity regarding my personal health and the treatment of animals in the production of meat has come ashore. Technically, I'll be practicing Pescetarianism (a diet that excludes all meat save fish, shellfish and crustacea) for 30 days because frankly I'm NOT going to give up sushi. Once it hits your lips it's so good!!!
So, I know I'll be in good company over the next 3 1/2 weeks but leave me some advice on what your favorite vegetarian meal is, where you buy your food, etc. Cheers!
FRED EGAN:
Jenna <<< Wow, thank you for all this useful information!
(07.23.08 03:41 PM)
Jenna:
Hi Fred! Just came across your blog and thought that I'd drop you a few good things to support you in being a ZERO meat eating peeps. With you being in Dallas there are tons a places http://www.dfwnetmall.com/veg/restaurantsvegetarianvegan.htm that will help with your endeavor. Try this link out http://www.dfwnetmall.com/veg/ for some good stuff.
Our favorite place to shop the frozen section is Tom Thumb, they have a lot to choose from to supplement in great meals. My favorite meal that I make is bean enchiladas... YUM! Here's a cute video and recipe http://www.chooseveg.com/enchiladas.asp. Don't knock them.. They are GOOD!
Oh Yeah, you can go to burger king and get a veggie burger, as well as, Chili's (if you didn't know).

Are you kidding ME?!?!?!?! O-M-G- words cant even express how hard you try to be cool. Its so sad. Its so, so sad.

Matt:
Fred, I've also heard that a place called Sprouts has some of the freshest produce around. I applaud you for giving up meat for a month. :)
(07.21.08 03:24 PM)
Andreanna:
I haven't eaten red meat, pork, or seafood for over 13 years. I was full vegetarian for about 4 years, skipped a couple years while I was pregnant with my kids, but now I've gone back to veg. I think you tend to get more creative without meat. Be careful of pre-packaged vegetarian stuff, they tend to be high in sodium and carbs, so always double check the label. Trader Joe's is awesome and has a lot of delicious stuff to choose from. Good luck!
(07.20.08 02:53 PM)
echard:
good for you fred. i've been vegan for a year and love it. a great book is john robbins(of baskin robbins) the food revolution. it really touches on the enviromental and ethical impact of factory farming. he also really makes an eloquent case against genetic mods. make friends with tofu, setein, quinio. also, try a sweet potato tempura roll along with your spicy tuna roll. killer.

I'm so proud of you. Keep up the good work. : )

I cut meat (except fish/shellfish) out of my diet too!! Three and a half weeks and going strong. I seriously feel sooooo much better :) It's not as hard as you may think ;)

Hey..I have been practicing Pescetarianism for 10 years now. Never went back. You will feel good and you won't regret it.

chipgillespie:
If you find yourself jonesin' for a burger, Chili's can make all of their burgers with a black bean patty that is surprisingly good! Good luck with this, man!
(07.19.08 09:27 AM)
Kim Lowery:
Yumm, I've cut out 1/2 the meat in my diet....well, I have my slip ups. My fav warm sandwich is Focaccia bread with basil pesto spread, an italian tomato spread, and sauteed onion/mushroom/bell pepper/ whatever veggie you love mix. If you're not vegan, then add a little ranch dressing and lots of cheese. Pop it in the oven for a few (just to melt the cheese) You'll never eat another sandwich...yummmmmmm! (p.s. mushrooms are a great substitute for meat in lots of things. They give a great texture!)

Hey Fred,
I've been a vegetarian for 25 years this year. No chicken, fish, meat, pork, anything!
There are tons of good foods out there to eat. Being a vegetarian is a fantastic lifestyle choice (even if it is only for a month), helps your own body, and even helps the environment in more ways than I can mention.
Fresh is really the way to go, if you want big flavors, and great taste.
I make simple little pizzas all the time - grab a small boboli crust (or some fresh pizza dough) and add 3 ingredients of your choice: Mushrooms, onions, olives, pineapple, sun-dried tomatoes, pine nuts, pesto sauce, garlic, whatever, and then bake it up.
Try increasing the size of your breakfast. Add some yoghurt, or fresh fruit, or cereal, or french toast (mmmm).
Have lots of seasonal fruit on hand. Right now the peaches are AMAZING! huge, juicy, and full of sweetness.
Good luck and let me know how it works out.

Indian food is great for a vegetarian. Its very flavorful and nutritious, as there are alot of aromatic spices, lentils, beans, etc. Many places like Trader Joes, Whole Foods, and local co-ops etc, sell these 1 minutes Indian packages. Basically its Indian food in a metallic package, which you heat and eat, but the great thing is that all the ingredients are completely natural. No preservatives, no additives, no artificial flavors etc.
(07.19.08 12:19 AM)
Kathryn:
Good for you! One of my favorite vegetarian dishes is a quesadilla filled with caramelized onions and corn kernels (and cheese of course). Soooo good!

My favorite thing in the whole world is hummus and warm pita bread! Yum! Good luck Fred!

1st annual blu awards

Good morning America. The good people at BluDomain have nominated me for their first annual Guy-of-the-Year award. One would think this in and of itself would get me all hot and bothered but au contraire. Otter pops are being awarded to the winner...200 of them, of which I can easily put away in one sitting.
I'm quite honored actually (and there is to be no sarcasm read into my affinity for Otter pops) because the last wedding/portrait photographer to be granted Blu's Photographer of the Year 2007 was catapulted into outer space, never seen to touch the planet Earth again...my dear friend, Jasmine Star. So the stakes are high, I need your help...AND I need Otter pops to get me through this Texas summer!
Jasmine*:
Hey Fred...it's Jasmine here...just checking in from outer space...and saying hi. Glad to see you blogging again! ;)

Linda Truong:
Hey Fred! I will remain a faithful fan of yours.. ;) Love your work! But it was a tough choice tho... Nate Kaiser is pretty rocking... But you rock!
