Hi. My name is Fred. Long time carnivore here. I've been on the brink of cutting meat out of my diet in the past but the perfect storm of genetically modified foods awareness, heightened sensitivity regarding my personal health and the treatment of animals in the production of meat has come ashore. Technically, I'll be practicing Pescetarianism (a diet that excludes all meat save fish, shellfish and crustacea) for 30 days because frankly I'm NOT going to give up sushi. Once it hits your lips it's so good!!!
So, I know I'll be in good company over the next 3 1/2 weeks but leave me some advice on what your favorite vegetarian meal is, where you buy your food, etc. Cheers!

Our favorite place to shop the frozen section is Tom Thumb, they have a lot to choose from to supplement in great meals. My favorite meal that I make is bean enchiladas... YUM! Here's a cute video and recipe http://www.chooseveg.com/enchiladas.asp. Don't knock them.. They are GOOD!
Oh Yeah, you can go to burger king and get a veggie burger, as well as, Chili's (if you didn't know).

I haven't eaten red meat, pork, or seafood for over 13 years. I was full vegetarian for about 4 years, skipped a couple years while I was pregnant with my kids, but now I've gone back to veg. I think you tend to get more creative without meat. Be careful of pre-packaged vegetarian stuff, they tend to be high in sodium and carbs, so always double check the label. Trader Joe's is awesome and has a lot of delicious stuff to choose from. Good luck!

good for you fred. i've been vegan for a year and love it. a great book is john robbins(of baskin robbins) the food revolution. it really touches on the enviromental and ethical impact of factory farming. he also really makes an eloquent case against genetic mods. make friends with tofu, setein, quinio. also, try a sweet potato tempura roll along with your spicy tuna roll. killer.

Yumm, I've cut out 1/2 the meat in my diet....well, I have my slip ups. My fav warm sandwich is Focaccia bread with basil pesto spread, an italian tomato spread, and sauteed onion/mushroom/bell pepper/ whatever veggie you love mix. If you're not vegan, then add a little ranch dressing and lots of cheese. Pop it in the oven for a few (just to melt the cheese) You'll never eat another sandwich...yummmmmmm! (p.s. mushrooms are a great substitute for meat in lots of things. They give a great texture!)

Hey Fred,
I've been a vegetarian for 25 years this year. No chicken, fish, meat, pork, anything!
There are tons of good foods out there to eat. Being a vegetarian is a fantastic lifestyle choice (even if it is only for a month), helps your own body, and even helps the environment in more ways than I can mention.
Fresh is really the way to go, if you want big flavors, and great taste.
I make simple little pizzas all the time - grab a small boboli crust (or some fresh pizza dough) and add 3 ingredients of your choice: Mushrooms, onions, olives, pineapple, sun-dried tomatoes, pine nuts, pesto sauce, garlic, whatever, and then bake it up.
Try increasing the size of your breakfast. Add some yoghurt, or fresh fruit, or cereal, or french toast (mmmm).
Have lots of seasonal fruit on hand. Right now the peaches are AMAZING! huge, juicy, and full of sweetness.

Indian food is great for a vegetarian. Its very flavorful and nutritious, as there are alot of aromatic spices, lentils, beans, etc. Many places like Trader Joes, Whole Foods, and local co-ops etc, sell these 1 minutes Indian packages. Basically its Indian food in a metallic package, which you heat and eat, but the great thing is that all the ingredients are completely natural. No preservatives, no additives, no artificial flavors etc.

Good for you! One of my favorite vegetarian dishes is a quesadilla filled with caramelized onions and corn kernels (and cheese of course). Soooo good!
